Method
Make the Dressing
- Add all dressing ingredients to a bowl or jar. Whisk or shake until smooth. Taste and adjust seasoning as needed.
Assemble the Salad
- Add greens to a bowl and top with chicken, egg, bacon, tomatoes, cucumber, red onion, and cheese. Drizzle with creamy balsamic dressing and toss just before serving.
Notes
- This salad is especially easy if you’ve already prepped grilled chicken or pulled chicken, if not a rotisserie chicken is a great option to avoid cooking.
- Portions are written per person so you can scale up or down easily.
- Any cheese works here—use what you have.
