Hearty Cobb Salad with Creamy Balsamic Dressing

A hearty, balanced Cobb salad with grilled chicken, eggs, bacon, and a creamy balsamic dressing that seriously slaps. Easy to scale, perfect for meal prep, and absolutely not “just a salad.”

Ingredients
  

Salad (per person)
  • 2 cups chopped greens, chopped romaine hearts are my preferred
  • 4-6 oz cooked chicken, chopped a rotiserie chicken also works amazingly.
  • 1 hard-boiled egg, chopped
  • 1-2 pieces cooked bacon, chopped or bacon bits for even less prep work
  • 1/3 cup tomatoes, chopped
  • 1/3 cup cucumbers, chopped
  • red onion, thinly sliced to taste
  • 2 tbsp chedddar cheese, shredded or any cheese you'd like
Creamy Balsamic Dressing (makes ~¾ cup)
  • 1/2 cup ½ cup mayonnaise I use light mayo, sub regular or even greek yogurt for more protein.
  • 1/4 cup balsamic vinegar
  • 1 tsp grainy dijon
  • 1 tsp honey
  • salt and fresh cracked pepper, to taste

Method
 

Make the Dressing
  1. Add all dressing ingredients to a bowl or jar. Whisk or shake until smooth. Taste and adjust seasoning as needed.
Assemble the Salad
  1. Add greens to a bowl and top with chicken, egg, bacon, tomatoes, cucumber, red onion, and cheese. Drizzle with creamy balsamic dressing and toss just before serving.

Notes

  • This salad is especially easy if you’ve already prepped grilled chicken or pulled chicken, if not a rotisserie chicken is a great option to avoid cooking. 
  • Portions are written per person so you can scale up or down easily.
  • Any cheese works here—use what you have.
