Asian-Style Grilled Chicken Thighs

Juicy Asian-style chicken thighs with a simple sesame-lime marinade. Easy to grill and flexible enough for bowls, salads, and meal prep.

Ingredients
  

  • 1.5-2 lb boneless, skinless chicken thighs You could swap for skin on bone in, or chicken breasts, and just adjust your cook time.
Marinade Ingredients
  • 2 tbsp soy sauce
  • 1.5 tbsp sesame oil
  • 1 lime, juiced or 1/2 lime if its a big one, feel free to add the zest if you'd like or sub with bottled lime juice
  • 1 tsp-tbsp honey sub white or brown sugar - note if you are bbqing not to use too much sugar as it can burn, i find 1 tbsp or less in the marinade does not burn.
  • 1/2 tbsp ginger, minced or paste
  • 1/2 tbsp garlic, minced or paste
  • 1/4 tsp ¼ tsp white pepper sub with black pepper, be a bit more generous, white pepper is more potent

Method
 

  1. Whisk marinade ingredients together.
  2. Add chicken and toss to coat.
  3. Marinate 30 minutes to overnight.
  4. Grill over medium-high heat ~5 minutes per side until 165°F.
  5. Let rest for a few minutes to get nice and juicy, then serve!

Notes

  • Chicken thighs are forgiving — darker colour means more flavour, not overcooking.
  • A zip-top bag works best for marinating overnight and saves fridge space.
