This Easy Cobb Salad is hearty, balanced, and genuinely satisfying—the kind of salad that feels like a full meal, not an afterthought. Between the protein-packed chicken, eggs, bacon, and cheese, plus a creamy balsamic dressing that you’ll want to drizzle on everything, this is one of those recipes that earns a permanent spot in the rotation.

The best part? It’s incredibly easy if you’ve already prepped my grilled chicken breasts or pulled chicken. Everything else is simple chopping and assembly, which makes it perfect for busy nights, meal prep, or feeding a family with wildly different appetites.

That creamy balsamic dressing is the real reason this salad keeps happening. It’s tangy, a little sweet, perfectly savory, and somehow works on everything — salads, wraps, grain bowls, even roasted vegetables. Once you make it once, you’ll want to keep a jar in the fridge, which is why I’ve also broken it out into its own recipe.

Rotisserie chicken works beautifully here too. A store-bought rotisserie chicken is one of the easiest ways to get a quick, healthy dinner on the table—already cooked, well-seasoned, and ready to use. It’s perfect for easy weeknight meals like this easy Cobb salad, as well as wraps, grain bowls, and sandwiches when cooking from scratch just isn’t happening.

Ingredients (Per Person – Scalable)

Salad

  • 1–2 cups chopped greens (romaine hearts are my favorite, but use what you like)
  • ¾–1 cup cooked chicken, chopped or shredded
    (Grilled chicken is best, but pulled chicken works great too)
  • 1 hard-boiled egg, chopped
  • 2–3 tbsp cooked bacon, chopped
    (or bacon bits if that’s what you have)
  • ¼ cup chopped tomatoes
  • ¼ cup chopped cucumber
  • Thinly sliced red onion, to taste
  • 2–3 tbsp shredded cheddar cheese
    (or any cheese you love or need to use up)

Creamy Balsamic Dressing (Makes ~¾ cup)

  • ½ cup mayonnaise
    (I use light mayo so I can be generous)
  • ¼ cup balsamic vinegar
  • 1 tsp grainy Dijon mustard
    (any Dijon-style mustard works)
  • 1 tsp honey
  • Salt and freshly cracked black pepper, to taste

Instructions

Make the Dressing

Balsamic vinegar adds acidity and depth to the dressing, balancing the richness of the mayo and tying all the flavours together.

Add all dressing ingredients to a bowl or jar. Whisk or shake until smooth and fully combined. Taste and adjust salt and pepper as needed.

Assemble the Salad

Add greens to a bowl or plate. Top with chicken, egg, bacon, tomatoes, cucumber, red onion, and cheese. Drizzle generously with creamy balsamic dressing and toss just before serving.

Optional Add-Ins & Swaps

  • Swap cheddar for feta, mozzarella, marble, or whatever cheese you have
  • Add avocado if you want extra creaminess
  • Use turkey bacon or skip bacon if needed
  • Any sturdy greens work: romaine, spring mix, spinach, or a blend

Ingredients
  

Salad (per person)
  • 2 cups chopped greens, chopped romaine hearts are my preferred
  • 4-6 oz cooked chicken, chopped a rotiserie chicken also works amazingly.
  • 1 hard-boiled egg, chopped
  • 1-2 pieces cooked bacon, chopped or bacon bits for even less prep work
  • 1/3 cup tomatoes, chopped
  • 1/3 cup cucumbers, chopped
  • red onion, thinly sliced to taste
  • 2 tbsp chedddar cheese, shredded or any cheese you'd like
Creamy Balsamic Dressing (makes ~¾ cup)
  • 1/2 cup ½ cup mayonnaise I use light mayo, sub regular or even greek yogurt for more protein.
  • 1/4 cup balsamic vinegar
  • 1 tsp grainy dijon
  • 1 tsp honey
  • salt and fresh cracked pepper, to taste
