Easy Pulled BBQ Chicken Sandwiches

With Sweet & Smoky Apple Coleslaw

Pulled BBQ chicken sandwich topped with creamy coleslaw on a soft bun

These easy pulled BBQ chicken sandwiches are the kind of low-effort, high-reward meal you’ll come back to again and again. Juicy shredded chicken tossed in BBQ sauce, piled onto soft buns, and topped with a crunchy sweet-and-smoky coleslaw — it’s comfort food that doesn’t require a long ingredient list or a whole afternoon in the kitchen.

This is one of those recipes that works just as well for a casual family dinner as it does for feeding a crowd. Because the chicken is already cooked, everything comes together quickly, and you can adjust the sauce, bun, or toppings based on what you have on hand. The sweet and smoky coleslaw adds crunch and balance, cutting through the richness of the BBQ chicken and making each bite feel fresh instead of heavy.

Perfect for busy weeknights, casual entertaining, or feeding a hungry family without complaints.

Why You’ll Make These Pulled BBQ Chicken Sandwiches Again

  • Uses pre-made shredded chicken (hello, time saver)
  • Totally customizable with your favourite BBQ sauce
  • Simple pantry-friendly coleslaw dressing
  • Scales easily for leftovers or a crowd
  • Kid-friendly, adult-approved, zero fuss

This is one of those meals that feels a little indulgent but is secretly very practical.

Ingredients

Pulled Chicken

For Serving

  • Soft buns (brioche-style is great)
  • Any buns or even sliced bread work just fine

Sweet & Smoky Coleslaw

  • 1 bag coleslaw mix (shredded cabbage)
  • 1 small apple, finely chopped

Coleslaw Dressing

  • ½ cup mayonnaise
  • 1 tsp sweet & smoky Dijon mustard
  • 1 tsp apple cider vinegar
  • Honey, to taste (optional)
  • Salt & pepper, to taste
  • Milk, as needed (optional, to thin)

Instructions

1. Heat the BBQ Chicken

Add shredded chicken to a skillet over medium heat.
Pour over BBQ sauce and toss until the chicken is evenly coated and warmed through. Add more sauce if needed — this should be saucy, not dry.

Remove from heat and set aside.

2. Make the Sweet & Smoky Coleslaw

In a large bowl, combine the coleslaw mix and finely chopped apple.

In a small bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, and honey (if using). Season with salt and pepper.

Pour dressing over the cabbage mixture and toss well.
If you prefer a looser, creamier slaw, whisk in a splash of milk until it reaches your desired consistency.

3. Assemble the Pulled BBQ Chicken Sandwiches

Pile warm BBQ chicken onto soft buns or bread.
Top generously with sweet & smoky coleslaw and serve immediately.

No Fuss Notes

  • This recipe is very forgiving, so exact measurements aren’t critical.
  • Use more or less BBQ sauce depending on how saucy you like your chicken.
  • The coleslaw can be made ahead and chilled, which helps the flavors meld.
  • For a crowd, keep the chicken warm and let everyone assemble their own sandwiches.
  • Toast the buns lightly for extra texture and to help prevent them from getting soggy.

Tips & Variations

  • Extra smoky: Add smoked paprika or chipotle powder to the BBQ sauce
  • More tang: Add a little extra apple cider vinegar to the slaw
  • Make-ahead: Both the chicken and coleslaw can be prepped ahead and stored separately in the fridge
  • Crowd-friendly: Keep the chicken warm in a slow cooker and let everyone build their own sandwich

What to Serve With Pulled BBQ Chicken Sandwiches

  • Oven fries or sweet potato wedges
  • Corn on the cob
  • Simple veggie sticks for an easy side
